Super Easy, Healthy, Zero-Waste Peanut Butter Banana Pancake Recipe

Estimated prep time: Six minutes

Ingredients:

  • 1 ripe banana (the more ripe the banana, the more “banana-y” they will taste!)
  • 1 rounded tablespoon peanut butter
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 cup rolled or instant oats*
  • ⅓ teaspoon vanilla extract (optional)
  • flax (optional)
  • water

Directions:

Peel and mash the banana in a medium bowl. Add egg, cinnamon, vanilla, and peanut butter. Finally, add the oats. *Use rolled oats for a more hearty texture or instant oats for a smoother texture. Slowly add water in increments to create desired consistency. Pour in spoonfuls onto a heated, lightly oiled skillet. Cook each side until brown.

Good to note: If you’re used to conventional mixes or bleached flour, These pancakes will have a slightly darker color once cooked, which is normal. Add a little flax or other berries to make them even healthier or add chocolate morsels for a special treat. Top with pure maple syrup, berries, or honey and enjoy!
